SOUTHERN BBQ SMOKEHOUSE

Selection of classic southern fare served with warm corn bread muffins

Sides – select 2: Macaroni Salad (V), Potato Salad (GF, V), Carrot & Cabbage Slaw (GF, VG), Broccoli Salad (GF, V)

House-made steamed milk bun with a choice of 2 flavours:

Shiro Shoyu Braised Daikon Steak, kimchi mayo, cucumber slaw (VG)

Crisp yellow corn tortillas on a bed of shredded iceberg, garnished with your selections.

This station comes with our super addictive crispy cumin scented tortilla chips, fresh pico de gallo, chef’s favourite hot sauces and fresh cut limes.

Side Stripe Shrimp - Local shrimp, avocado, orange segment, pickled onion, cilantro

Carnitas - braised local pork shoulder, corn salsa, avocado, sour cream, pickled onion, cilantro

Tofu Tikka Masala - mango + cucumber, salsa fresca (VG, GF)

Al Pastor - smoked chilli pork, guajillo, grilled pineapple, tomatillo (GF, DF)

Jamaican Jerk Prawn - mango salsa fresca, avocado crema (GF,DF)

Peruvian Scallop Ceviche - lime marinated with mango, compressed cucumber + passion fruit caviar (DF, GF)

Ecuadorian Style Shrimp Ceviche - lightly poached prawns, citrus + tomato broth

Guests can choose to add accompaniments of corn tostadas, plantain chips, micro popcorn, corn nut gremolata + hot sauce

With your choice of protein, Poke bowls come with the following accompaniments: Japanese rice, avocado, Kale goma-ae, breakfast radish, pickled carrot + cucumber salad, edamame, sesame seeds + pea shoot
